GAIL’s bakery is set to open its doors on Watford High Street this Thursday, 24 October. The new location is situated next to the top of town entrance to Atria Watford, bringing the popular bakery chain to the local community.
Founded by Yael Mejia in the early 1990s, GAIL’s started as a premium wholesale craft bakery supplying top chefs and food venues across London. In 2003, Tom Molnar and a group of friends joined the business, helping it expand by opening neighbourhood craft bakeries. The first GAIL’s bakery opened in Hampstead in 2005, serving a variety of fresh, handmade bread, sandwiches, salads, pastries, cakes, and a range of speciality coffee drinks.

The new Watford location incorporates subtle elements that reflect the town’s history. For example, cocoa husks have been recycled into the tabletops, a nod to Watford’s former cocoa processing industry. Additionally, pink wood pulp is used in the design, referencing Watford’s heritage in printing, an industry still present in the area today.
Alongside the opening, GAIL’s has launched its autumn menu, which includes seasonal items such as Apple & Sesame Butter Cake, Mushroom & Caramelised Onion Quiche, and Sage & Squash Slice, all made with locally sourced ingredients where possible.

The new GAIL’s bakery will open at 70 High Street, Watford.
